Potassium Bitartrate (Cream of tartar)
Formula KC4H5O6.
It is the potassium acid salt of tartaric acid.

Synonyms: Potassium bitartrate; Potassium hydrogen tartrate
; Cream of tartar

In food, cream of tartar is used for:

Stabilizing egg whites, increasing their heat tolerance and volume
Stabilizing whipped cream, maintaining its texture and volume
Anti-caking and thickening
Preventing sugar syrups from crystallizing
Reducing discoloration of boiled vegetables
Baking powder, as an acid ingredient to activate baking soda
Sodium-free salt substitutes, in combination with potassium chloride

Cream of tartar can be mixed with an acidic liquid such as lemon juice or white vinegar to make a paste-like cleaning agent for metals such as brass, aluminum or copper, or with water for other cleaning applications such as removing light stains from porcelain.

Cream of tartar was often used in traditional dyeing where the complexing action of the tartrate ions were used to adjust the solubility and hydrolysis of mordant salts such as tin chloride and alum.

Uses:

  • Mainly used to manufacture tartaric acid salts.
  • Used as acidifying agent of drinks, candies, jams and other types of food. tartaric acid has been used in the production of effervescent salts, in combination with citric acid, in order to improve the taste of oral medications.
  • The potassium antimonyl derivative of the acid known as tartar emetic is included, in small doses, in cough syrup as an expectorant.
  • Tartaric acid also has several applications for industrial use. The acid has been observed to chelate metal ions such as calcium and magnesium. Therefore, the acid has served in the farming and metal industries as a chelating agent for complexing micronutrients in soil fertilizer
  • For cleaning metal surfaces consisting of aluminium, copper, iron, and alloys of these metals.

POTASSIUM TARTRATE (Di Potassium Tartrate)

Potassium tartrate is a tartaric acid salt that is commonly used in food, particularly baking powder. It was previously confused with potassium bitartrate, a compound known as cream of tartar that has been in use for a long time. 

Tartaric acid dipotassium and potassium tartrate, also known as K2C4H4O6 . Colourless crystal or white crystalline powder that dissolves in water but not ethanol.
Melting point is 155 degrees Celsius, and the boiling point is 155-220 degrees Celsius.
